Roasting coffee is not just an art but a real subject of study and continuous research. We roast coffee by hand but using all the technology in our possession. We believe that craftsmanship combined with the most advanced technology is the key to success. Our main goal is to enhance the natural characteristics of each individual coffee through roasting.
We study every coffee bean
This is the method used by the most modern roasting machines: the beans are cooked by convection, through the use of hot air which enters and is forced into the drum. The air is preheated in a separate combustion thanks to a modular burner. The coffee is air-roasted, and direct contact with the hot metal of the cylinder is almost non-existent, even if thanks to the modular speed of the drum, in some cases we can roast the coffee by conduction.
Our roastery boasts a cutting-edge and international team, with very important global awards. In fact, we won the title as the best Italian coffee roaster 2019, with our Michele Anedotti and the title as the best Italian coffee taster with our Francesco Sanapo. Our roastery team is Q-grader certified by the coffee quality institute and we use a single and certified language for coffee tasting.
